I love Fontina cheese on pizza, and mushrooms are one of my favorite toppings, so when I saw this pizza on Pinterest, I had to give it a try. This is definitely a mushroom lover’s pizza, and between the Fontina and the Baby Bellas it’s incredibly earthy. Though the recipe writer enjoyed a white wine with this, I think a flavorful Pinot Noir would be perfect (we were abstaining from drinking the night we made this and had it with water!).
The recipe I used can be found here, though I made a few tweaks. I didn’t use any butter or wine while cooking the mushrooms, and I just used Baby Bella mushrooms for the topping – there’s not much of a selection of fresh exotic mushrooms to be found around here.
