For the Fourth of July this year, Tim and I decided to have a really low-key day. Tim has been looking forward to this holiday since we moved into our apartment last year because our view is so expansive. We were able to see three different fireworks shows (not to mention all the illegal fireworks being set off from the streets of San Francisco) – it was awesome.

So instead of going out, we did a ton of cooking and had some good friends over for dinner, beer, and of course, fireworks. That morning, I spent some time on Pinterest and saw not one, but two recipes for Slab Pie, which I had never heard of before that day.

I didn’t make this recipe for the 4th, but I made it the following Saturday. It was so easy (although I’d like to try making my own pie dough next time – the packaged stuff doesn’t come close to the real thing) and came out deliciously. I haven’t had much luck with traditional pies, but I slab pies are my new best friend. I think this would be particularly cute shaped into mini pies for a party!
